Squid ink pasta in black ink sauce

::Ingredients: (2 serves)::

- 1 shallots, finely sliced
- 2 garlic cloves, peeled, chopped
- 1 red chili, finely sl iced
- 4 cheery tomatoes, cut half
- 1 bunch coriander small, chopped (optional*)
- 4 grey prawns, clean and devein
- 180 g, Squid sliced
- 125 g, Squid Ink pasta
- 1 bacon slice, finely sliced (*optional)
- 50 ml Olive oil
- 8 g, squid ink (3-4 pouches)
- chicken stock
- Fresh Croutons

::Method::

- Heat olive oil in a pan, stir fry bacon, garlic and shallots.
- Add coriander, chili, prawn, and squid ink & squids
- Add pasta.
- Add a bit of chicken stock.
- Toss through gently and check the seasoning.
- Add salt and pepper, to taste.
- Divide into serving bowls.

- Sprinkle with croutons and sliced tomatoes
- And serve immediately.
